Hi could anyone help me with the minimum setup I need for the app to run. (thermometer, probs, etc)  I haven't found anything under 250 to have the app running.

For actual thermocouples, no - that's about as cheap as it gets for the hardware. Roastmaster does, though, support two thermistor-style probes - the Range and the iCelsius BBQ wired. They do not support temps as high as thermocouples, but they are much cheaper (~$70 USD).
