How about an option to manually log your temp data to moniter your roast.

Perhaps a temp a and temp b curve and an internal probe reading from an inexpensive bbq thermometre?

You don't need the data logging option to manually log temp data. In other words, you can do this now. Just create as many curves as you need (reading for temps or control for roaster controls) by tapping the curve button in the roast console.

During the roast, you can enter temps either right on the roast console, or in the roast analyzer. In the console, tap the graph to select each curve in succession. In the analyzer, tap on the curve you want to select (or two finger tap to invoke the curve chooser). Once a curve is selected, in either screen, tap on the LCD temp readout to enter a new node at the current time of the roast.

Also, profiles work the same way whether you use data logging or not. You can create a profile with target curves to match, and curve “templates” that automatically configure new roasts for data collection.
