Sorry, no. Roastmaster provides several different cupping protocols (SCAA, Tasting, Sweet Maria's, etc) you can choose from, but you cannot define your own custom attributes or change those protocols. The coding involved is mind-numbing. I know of what I speak–I’ve just finished it for another software package called OpenCup. It’s a cupping-centric app, and can do what you’re after and runs on iPad.
That level of control is really outside of the scope of Roastmaster, which is more roast-centric. I do plan to adopt descriptors (tags) at some point, which is much more within Roastmaster’s focus. But I don’t have a timeline for that yet.
